Recipe: Red Quinoa Salad

2 cups cooked Red Quinoa

1 zucchini, small diced

1 red pepper, small diced

1 Roma tomato, small diced

3 leaves of kale, steamed, and chopped.


1/4 cup lemon juice

2 tsp honey

1/4 cup olive oil

1 tsp crushed garlic

salt and pepper to taste
